Ada Polo Ba Gusht - cooking recipe

Ingredients
    1 c. lentils
    3 c. rice (extra long rice)
    8 c. water
    2 tsp. butter
    2 medium onions, sliced
    1 c. raisins
    2 1/2 lb. beef or lamb cubes
    6 Tbsp. salt
    1/2 tsp. turmeric
    1/2 tsp. salt
    1/4 tsp. cinnamon
    2 c. water
Preparation
    Boil lentils in enough salted water until tender, but not soft.
    Drain and set aside.
    Rinse the rice several times in warm water; soak in warm water and set aside.
    Bring a large pot of salty (2 tablespoons) water to a rapid boil.
    Drain the water from the soaked rice; pour the rice in boiling water.
    Boil 8 to 10 minutes.
    Stir occasionally to prevent the grains from sticking together.
    Drain the rice in a colander; rinse cold tap water over rice.
