Morning Glory Muffins - cooking recipe
Ingredients

2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 1/4 c. white sugar
3 eggs
1 c. oil
1 tsp. vanilla
2 c. grated carrots
1/2 c. cut-up dates
1/4 c. chopped walnuts
1/2 c. coconut
1 c. grated apple
Preparation

Sift together flour, soda, salt and cinnamon into a large bowl.
In another bowl, beat eggs; add sugar, oil and vanilla. Make a well in the flour mixture.
Pour in oil and eggs.
Stir until all is
moistened.
Fold in carrots, dates, walnuts, coconut and apple.
Don't overmix.
