Lemon Meringue Pie - cooking recipe
Ingredients

1 1/2 c. sugar
7 Tbsp. cornstarch
dash of salt
1 1/2 c. water
3 beaten egg yolks
2 Tbsp. butter
1/3 c. lemon juice
1 baked 9-inch pie shell
3 egg whites
1 tsp. lemon juice
6 Tbsp. sugar
Preparation
-
In
saucepan,
combine 1 1/2 cups sugar, cornstarch and salt; blend
in
water.
Bring to boiling over medium heat and cook, stirring constantly,
until
thick,
about
5
minutes. Remove from heat.
Stir
small
amount of hot mixture into egg yolks, then return to hot
mixture
in pan.
Bring to boil and cook 1 minute,
stirring
constantly.
Remove
from heat.
Add butter. Slowly stir in 1/3 cup lemon juice.
Cool to lukewarm and pour into pie crust.
