Mike'S Pork Medallions Dijon - cooking recipe

Ingredients
    6 pork medallions or pork chops
    1/4 c. Dijon mustard
    1/4 c. preserves (apricot, peach or currant)
    1 Tbsp. balsamic vinegar
    1 can sliced peaches
Preparation
    In frying pan, brown pork in vegetable oil or margarine. Remove to a shallow baking pan.
    Into frying pan, mix mustard, preserves and vinegar.
    Simmer over low heat for 1 minute.
    Pour over chops.
    Bake chops for 35 minutes, uncovered, at 325\u00b0.
    Serve with sliced peaches, arranged on platter.
