Red Beans And Rice - cooking recipe

Ingredients
    8 oz. dried red beans
    8 oz. smoked beef or turkey sausage, sliced 1/2-inch thick
    1 large onion, chopped
    2 ribs celery, chopped
    1/2 green pepper, chopped
    2 cloves garlic, minced
    1 Tbsp. parsley, minced
    2 bay leaves
    1 tsp. salt (or more to taste)
    1/2 tsp. black pepper
    2 tsp. liquid hot pepper sauce or to taste
    1 Tbsp. Worcestershire sauce
    1 c. raw rice, cooked according to pkg. directions
Preparation
    Cover beans with cold water in a large mixing bowl.
    Let soak overnight.
    Drain beans and discard soaking water.
    Place in large cooking pot with sausage slices, onion, celery, pepper, garlic, parsley and bay leaves.
    Cover with water and bring to a boil. Reduce heat and simmer, uncovered, for 2 hours, stirring occasionally.
    Add salt, black pepper, hot pepper sauce and Worcestershire sauce.
    Cook 30 minutes longer or until beans test done.
