Sweet And Sour Chicken And Rice - cooking recipe

Ingredients
    4 boneless chicken breasts
    1 medium onion, sliced
    1 green pepper, cut in strips
    2 large carrots, cut in strips
    1 jar La Choy sweet and sour duck sauce
    4 to 5 c. instant Minute rice, cooked
    1 c. pineapple chunks
Preparation
    Roll chicken in skillet and fry until done and tender.
    Cut into bite size chunks.
    In saucepan, cook vegetables until tender by steaming with 1 cup of water.
    When chicken is done, drain vegetables of any remaining water.
    Add chicken to vegetables.
    Add sauce.
    Add 1/2 cup of hot water if needed to thin.
    Add pineapple chunks; simmer 10 minutes on low heat.
    Pour over cooked rice.
