Spanish Rice - cooking recipe

Ingredients
    1 c. rice
    chopped onion
    1/4 c. butter
    1 c. water
    salt to taste
    pepper to taste
    1 can stewed tomatoes, chopped
    chopped green pepper (optional)
Preparation
    Fry rice and chopped onion in butter until browned.
    Add water, salt, pepper, stewed tomatoes with juice and chopped green pepper which is optional and mostly for looks.
    Put on to cook (low) 30 minutes.
    Do not remove lid while cooking.
    When finished, if you desire it a little hotter, add juice from Ro-Tel.
