Zucchini Bread - cooking recipe

Ingredients
    2 tsp. vanilla
    3 eggs
    1 c. vegetable oil
    2 c. raw unpeeled zucchini, grated
    1/2 c. chopped nuts
    1 tsp. baking powder
    3 c. flour
    2 c. sugar
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
Preparation
    Sift dry ingredients together; mix in remaining ingredients. Pour into greased and floured loaf pans.
    May top with sugar, butter and cinnamon, if desired.
    Bake 1 hour at 325\u00b0.
    Makes 2 (9 x 5-inch) loaves.
