Sweet Potato Balls - cooking recipe

Ingredients
    6 medium sized sweet potatoes
    1/4 c. butter, melted
    1 tsp. salt
    1 egg, slightly beaten
    1 c. crushed drained pineapple
    1/2 c. chopped pecans
    2 Tbsp. molasses or 3 Tbsp. brown sugar
    1 c. flaked coconut
    marshmallows (optional)
    honey
Preparation
    Boil, peel and mash sweet potatoes.
    Add butter, salt, egg, pineapple and pecans; whip lightly.
    Mix in spices and molasses. Roll into balls and press marshmallow into the center of each ball with thumb.
    Roll in hot honey and then in flaked coconut (or chopped nuts, or serve plain).
    Pineapple could also be left out and nuts on inside could also be left out.
