Homemade Souse - cooking recipe

Ingredients
    1/2 hog head, cooked tender
    black pepper, red pepper, salt and sage (if you like)
Preparation
    Mix all ingredients (hog head should be taken off the bone and cut or mashed well).
    Put into cheesecloth and mash grease out. Tie up and hang up overnight to drip.
    Take out of cloth, slice thin and store in refrigerator.
