Ham And Sausage Jambalaya - cooking recipe

Ingredients
    2/3 Cup Vegetable Oil
    2 Med Onions Chopped
    1 Med Green Bell Pepper Chopped
    3 Celery Stalks Chopped
    5 Med Cloves Garlic Minced
    1 lb. Ham Cut into Bite Size Pieces
    1-1/2 lb. Sliced Smoked Sausage (Kielbasa or Andouie)
    1 lb. Shrimp
    2 Cups Long Grain White Rice
    2 Large Tomatoes Chopped
    3 Cups Beef Stock
    1/2 tsp. Fresh Black Pepper
    1/4 tsp. Cayenne Pepper
    Salt to Taste
    12 Green Onions Chopped
    1/2 Cup Minced Parsley
Preparation
    In large heavy pot heat oil, add onion, pepper, celery, and garlic.
    Cook for about 5 minutes.
    Add ham and sausage, cook until sausage is light brown (8 minutes).
    Add rice, cook 5 minutes-add tomatoes, beef broth and seasoning.
    Reduce heat. Cover and simmer until rice is tender and liquid is reduced (about 45 minutes).
    Add shrimp, simmer 5-10 minutes.
    Stir in parsley and green onion.
    Serve hot. (6-8 dinner size servings).
