Manhattan Quahog Chowder - cooking recipe

Ingredients
    1/4 c. salt pork, diced
    1 medium onion, chopped
    1/4 c. chopped celery
    3 c. diced potatoes
    1/8 tsp. thyme
    2 c. boiling water
    1 1/2 c. pureed tomatoes
    about 1 doz. chopped quahogs
    salt and pepper to taste
Preparation
    Over
    low
    heat, cook salt pork in large saucepan until fat is extracted.
    Remove salt pork (optional).
