Lemon Couscous - cooking recipe

Ingredients
    2 1/4 c. water
    10 oz. couscous
    1 large chopped tomato
    1 c. seeded, peeled, chopped cucumber
    1 c. sliced and chopped scallions
    1/2 c. chopped parsley
    1/4 c. chopped mint
    1/2 c. lemon juice
    2 Tbsp. water
    2 Tbsp. olive oil
    1 tsp. salt
    1 tsp. pepper
Preparation
    Bring water to a boil in saucepan; stir in couscous.
    Remove from heat.
    Cover and let stand for 5 minutes.
    Fluff with a fork. Combine couscous with tomato, cucumber, scallions, parsley and mint; toss.
    Combine lemon juice and next 4 ingredients.
    Stir well.
    Pour over couscous mixture and toss.
    Yields 8 (1-cup) servings.
