Hot Cucumber Relish - cooking recipe
Ingredients

2 tsp. olive oil
1 small sweet red pepper, chopped fine
3 green onions, thinly sliced and white and green parts separated
2 medium size cucumbers, peeled, halved lengthwise and cut into 1/4-inch cubes
2 Tbsp. fresh lime juice
1 tsp. honey
2 tsp. chopped fresh mint
1/2 tsp. salt
Preparation

Heat oil in medium-size skillet over medium heat.
Add red pepper and white parts of green onion; saute 2 minutes.
Add the cucumber; saute 3 minutes or until cucumber is tender-crisp. Remove from heat.
Stir in green parts of onion, lime juice, honey, mint and salt.
Serve hot or warm.
Can be served with fish, meat or poultry.
