Coodies - cooking recipe

Ingredients
    2 lb. dry codfish (boneless if possible)
    3 lb. white potatoes, cooked, mashed and cooled
    1 onion, finely chopped or grated
    1 Tbsp. parsley
    1/2 stick butter or margarine, at room temperature
    2 large eggs, beaten
    1 tsp. baking powder
    salt and pepper to taste (optional)
Preparation
    Soak codfish overnight.
    The next morning, drain off water. Place codfish in saucepan; cover with fresh water and bring to boiling.
    Boil until tender (about 45 minutes to an hour).
    Drain and cool.
    If not boneless, debone codfish, flaking with a fork as you go along.
    Add cooked, mashed potatoes, butter, onion, parsley, baking powder and eggs.
    Salt and pepper, if desired. Combine and mash mixture with a large fork or beat with electric mixer.
    Shape into cakes or balls.
    Deep fry in hot oil until golden brown all around.
