Zucchini Bread(Yields 2 Loaves) - cooking recipe

Ingredients
    3 extra large eggs
    1 c. vegetable oil
    1 3/4 c. granulated sugar
    1 tsp. vanilla
    2 1/2 c. zucchini, shredded
    3 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking soda
    1/2 tsp. baking powder
    1/2 tsp. cinnamon
Preparation
    In mixing bowl, beat eggs. Add oil, sugar and vanilla.
    Mix well. Add zucchini.
    Sift together dry ingredients.
    Add to mixture and lightly blend.
    Pour into 2 greased loaf pans and bake at 350\u00b0 for 45 to 50 minutes or until a cake tester inserted into center of loaf comes out clean.
