Eggs Florentine - cooking recipe

Ingredients
    2 whole wheat English muffins
    2 eggs, beaten
    1 tsp. goat cheese
    1 tsp. sun-dried tomato
    4 c. spinach, cleaned and stems removed
    olive oil
    2 cloves garlic, minced
    2 tsp. tarragon sauce
Preparation
    Coat pan with little olive oil and cook on low heat in pan the eggs, goat cheese and dried tomato until light and fluffy. In a saute pan, add olive oil, garlic and spinach. Cook until spinach is just wilted. Toast muffins. Add spinach to muffin. Top with egg and Tarragon Sauce.
