My Sister-In-Law'S Hot Mexican Dip - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 medium onion, chopped
    2 medium tomatoes, peeled, seeded and chopped
    2 Tbsp. jarred jalapeo pepper, minced
    1 (10 oz.) pkg. frozen chopped spinach, defrosted and squeezed dry
    2 c. grated Monterey Jack cheese
    8 oz. brick cream cheese, cut in small cubes
    1 c. half and half
    1 Tbsp. red wine vinegar
    salt and pepper
    1/2 c. sliced black olives
Preparation
    Saute onion in oil until soft. Add tomatoes and jalapeo. Cook 2 to 3 minutes more. Transfer to a large bowl. Add the rest of the ingredients. Mix until well blended.
