Southwestern Bean Salad - cooking recipe

Ingredients
    1/4 c. oil
    1/2 c. red wine vinegar
    1 1/4 tsp. ground cumin
    1/4 tsp. salt
    2 celery ribs, diced
    2 scallions, diced
    1 can pink beans
    1 can black beans
    1 can black-eyed peas, drained and rinsed
    celery leaves
Preparation
    In bowl, with wire whisk, mix oil, vinegar, cumin and salt. Add celery, scallions and beans; gently toss to coat well.
    Let sit 2 hours.
    To serve, stir in celery leaves.
