Ingredients

flour tortillas
fresh cooked or canned pinto beans
1 can Ro-Tel tomatoes and green chilies, drained
Cheddar cheese, grated
1 Tbsp. oil
Preparation

Add Ro-Tel and oil to beans and simmer for 20 minutes.
Bean mixture can be served as is or whipped with a hand mixer.
Warm tortillas and fill with beans.
Top with grated cheese.
Ground beef or turkey can be added, if desired.
