Greek Pot Roast - cooking recipe

Ingredients
    3 to 4 lb. choice beef
    6 c. hot water
    6 Tbsp. olive oil
    4 Tbsp. butter
    2 carrots
    3 sticks celery
    1 large onion
    2 green peppers, cut
    4 garlic cloves
    1 Tbsp. pickling spices (optional)
    1 Tbsp. salt
    1 tsp. pepper
    1 (6 oz.) can tomato paste
    1/4 c. red wine
Preparation
    In large pot, brown meat in oil and butter.
    Add onion and garlic, brown a bit.
    Add rest of vegetables, spices and tomato paste.
    Cook several minutes.
    Add the 6 cups hot water.
    Bring to a boil.
    Add wine.
    Reduce heat, simmer for 2 to 3 hours, turning meat after 1 hour.
