Zucchini Beef Skillet - cooking recipe

Ingredients
    1 lb. ground beef
    1 c. chopped onion
    3/4 c. chopped green peppers
    1 clove garlic, minced
    1 1/4 tsp. salt
    1/4 tsp. pepper
    1 tsp. chili powder (more to taste)
    5 c. sliced zucchini or yellow summer squash
    2 large tomatoes, peeled and chopped
    1 1/4 c. fresh whole kernel corn (may be frozen or canned)
    1/4 c. chopped fresh parsley
    2 Tbsp. chopped pimientos
Preparation
    Saute beef, onion, green pepper and garlic until well browned. Add remaining ingredients.
    Cover and simmer 10 to 15 minutes or until vegetables are tender.
    Makes 6 servings.
    I double or triple this and freeze for later use.
