Chocolate Truffle Cake - cooking recipe

8 eggs, separated
8 oz. bittersweet chocolate
1 c. sugar
1 c. butter
1 tsp. vanilla extract
3 Tbsp. water
1 tsp. salt
Preparation

Preheat oven to 375\u00b0.
All ingredients should be at room temperature.
Place chocolate in a food processor and process with the sharp blade until chocolate is like coarse meal.
Add egg yolks, butter, sugar and extract and process until smooth.
In a large mixing bowl, combine egg whites, water and salt and beat until very stiff.
Fold chocolate mixture into egg whites and pour batter into a greased and lined 9-inch spring-form pan.
Bake for 20 minutes at 375\u00b0, then reduce heat to 350\u00b0 and bake for 50 minutes.
Cool cake on a cake rack.
