Jambalaya - cooking recipe
Ingredients

2 1/2 to 3 lb. broiler-fryer chicken, cut up
2 c. water
1 1/2 tsp. salt
1/4 tsp. pepper
8 pork sausage links
1 c. uncooked regular rice
1 medium onion, chopped
1/2 tsp. dried thyme leaves
1/8 to 1/4 tsp. cayenne red pepper
1 large clove garlic, finely chopped
1 (16 oz.) can stewed tomatoes (undrained)
Preparation

Remove skin from chicken, if desired.
Place chicken, water, salt and pepper in Dutch oven.
Heat to boiling; reduce heat. Cover and simmer for 20 minutes.
Skim fat from broth, then strain broth.
