Susan'S Wonderful Cheese Bread - cooking recipe

Ingredients
    2 pkg. active dry yeast
    1 1/2 c. warm water
    2 eggs, beaten with fork
    2 Tbsp. sugar
    2 1/4 tsp. salt
    2 c. grated cheese (preferably sharp Cheddar)
    1/4 c. caraway seed (optional)
    6 1/4 to 6 1/2 c. sifted all-purpose flour
    melted butter or margarine
Preparation
    In a large bowl, sprinkle dry yeast on warm water.
    Stir in sugar and salt until dissolved.
    Add 2 cups of the flour; beat well with spoon.
    Add eggs, cheese and seeds (if used); beat well. Beat in 3 to 4 more cups flour to make a soft dough.
    Turn out on a lightly floured surface, cover with bowl and let rest 10 minutes.
    Knead into dough enough of remaining flour to make a smooth elastic dough with small blisters over surface, about 8 to 10 minutes.
