Bear Roast - cooking recipe

Ingredients
    1 bear shoulder or rump
    salt and pepper to taste
    flour
    3 Tbsp. bacon drippings
    1 stalk celery, chopped
    1 onion, chopped
    1 c. canned tomatoes
    1 bay leaf
    1/2 tsp. thyme
    1/4 tsp. allspice
    1 carrot, sliced
Preparation
    Cover meat with salt, pepper and flour.
    In Dutch oven or roasting pan, brown meat in bacon drippings.
    Add all remaining ingredients.
    Cover and simmer for 4 1/2 hours or until tender, turning meat every hour.
    Serves 4 to 6.
    Preparation Time:
    5 hours.
