Norwegian Lefsa - cooking recipe

Ingredients
    1 c. shortening or margarine
    4 qt. mashed potatoes
    1/2 c. cream
    1 Tbsp. salt
    3 Tbsp. sugar
    2 1/2 c. flour
Preparation
    Blend potatoes and shortening. Allow to cool in refrigerator. With 5 cups of potato mix, blend in cream, salt, sugar and flour. Take a 1/4 portion and roll out on a floured surface.
    This dough is very difficult to handle, so work with small amount at a time. Too much flour makes the Lefsa tough.
    Cook on a flat plate or pan.
