Vegetable Casserole - cooking recipe

Ingredients
    2 pkg. fresh mixed vegetables (corn, beans, peas and carrots)
    1 can water chestnuts, sliced and drained
    1 c. sharp Cheddar cheese, grated
    3/4 c. lite mayonnaise
    salt and pepper to taste
    25 Ritz crackers, crushed
    1/2 stick margarine
Preparation
    Combine vegetables with cheese and mayonnaise; season with salt and pepper.
    Spread in 9 x 13-inch baking dish.
    Bake for 30 minutes at 350\u00b0.
    Mix crackers with margarine and sprinkle on top of casserole.
    Bake an additional 15 minutes.
    Serves 8 to 10.
