Connie'S Zucchini Casserole - cooking recipe
Ingredients

2 lb. zucchini
1 large onion
1 c. grated carrots
1 box Stove Top stuffing (chicken flavor)
1 can cream of chicken soup
1 stick margarine
1 c. sour cream
Preparation

Bring to a boil the zucchini and onion.
Simmer 5 minutes; drain.
Add grated carrots. Melt margarine.
In a separate container, mix stuffing mix and seasoning into melted margarine and add all but 2/3 cup to zucchini mixture. Add chicken soup and sour cream.
Salt and pepper to taste.
Sprinkle remaining stuffing over top.
Pour into lightly greased casserole dish. Bake at 350\u00b0 for 45 minutes or until done.
