Lemon Meringue Pie - cooking recipe
Ingredients

1 (9-inch) baked pie shell
1 1/2 c. sugar
1/3 c. plus 1 Tbsp. cornstarch
1 1/2 c. water
3 egg yolks, slightly beaten
3 Tbsp. butter or margarine
2 tsp. grated lemon peel
1/2 c. lemon juice
2 drops yellow food coloring (if desired)
Preparation

Heat oven to 400\u00b0.
Bake pie shell.
Mix sugar and cornstarch in medium saucepan. Gradually stir in water.
Cook over medium heat, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.
Gradually stir part of the hot mixture into the egg yolks. Blend into hot mixture in pan.
Boil and stir 1 minute.
Remove from heat.
Stir in butter, lemon peel, lemon juice and food coloring.
Pour into baked pie shell.
