Red Hot Pickle Rings - cooking recipe

Ingredients
    2 gal. cucumbers (yellow), cut into rings after peeling and seeding
    2 c. lime
    8 qt. water
    1 c. vinegar
    1 small bottle red food color
    1 Tbsp. alum and water to cover
    2 c. vinegar
    2 c. water
    10 c. sugar
    6 to 8 sticks cinnamon
    1 pkg. red hots (9 to 10 oz.)
Preparation
    Cover
    rings
    with
    lime
    and
    water
    mixture.\tSoak 24 hours. Drain
    and
    wash
    in
    cold water.\tSoak 3 hours in ice water. Drain.
    Mix
    1
    cup vinegar, food color and alum; pour over
    rings with
    water
    to
    cover.
    Heat and simmer 2 hours; drain.
    Bring 2
    cups
    vinegar,
    2
    cups\twater, sugar, stick cinnamon and red hots to boil and pour over rings.
    Weigh down to
    keep all covered with mixture.
    Let stand overnight.
    Heat 3 mornings; the 3rd morning heat to boiling and pack into jars and seal.
