Sicilian Meat Loaf - cooking recipe
Ingredients

2 beaten eggs
3/4 c. hard crumbs
1/2 c. tomato juice
2 Tbsp. parsley
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
1 small clove garlic, minced
2 lb. lean ground meat
8 thin slices boiled ham
6 oz. shredded Mozzarella cheese
3 slices Mozzarella cheese
Preparation

Mix all except ham and shredded and sliced cheese with the ground meat.
On foil or wax paper, put meat mixture into a 12 x 10-inch rectangle.
Add ham slices on top of meat, leaving a small margin around edges.
Sprinkle shredded cheese over ham.
Starting at short end, carefully roll up meat, using foil or wax paper to lift.
Seal all edges.
Place roll, seam down, in 13 x 9 x 2-inch pan.
Bake in 350\u00b0 oven for 1 hour and 15 minutes.
Place cheese slices over top of roll; return to oven for 5 minutes or until cheese melts.
