Fruit Compote - cooking recipe

Ingredients
    1/4 c. quick cooking tapioca
    3 c. water
    1/4 c. sugar
    dash of salt
    2 cans (6 oz.) frozen orange juice concentrate
    3 c. or more fresh fruit (peaches, bananas, strawberries, blueberries, apples, oranges, etc.)
Preparation
    Combine tapioca and water and let stand 5 minutes.
    Cook and stir over medium heat until it comes to a boil.
    Remove from heat and blend in sugar, salt and juice concentrate.
    Cool, stirring occasionally.
    Cover and chill.
    Before serving, fold in fruits: fresh fruits or frozen fruits work best.
