Hearty Beef Goulash Soup - cooking recipe

Ingredients
    6 small unpeeled red potatoes
    1 medium onion
    2 Tbsp. oil
    2 garlic cloves
    1/2 lb. ground round
    3 c. tomato juice
    1 3/4 c. beef broth
    2 tsp. paprika
    1/2 tsp. black pepper
    1 small green bell pepper
    1 small red bell pepper
Preparation
    Cut the potatoes into 1/4 inch dices.
    Coarsely chop the onion. In a large saucepan, warm the oil over medium-high heat until hot, not smoking.
    Add onion and garlic and saute until onion is just translucent, 1 to 2 minutes.
    Crumble ground beef into pan and cook, breaking meat up with a spoon, until meat just begins to brown, 5 to 10 minutes.
    Add tomato juice, beef broth, paprika, black pepper and potatoes.
    Bring mixture to a boil, reduce heat to medium-low.
    Cover and simmer, stirring often, for 10 minutes.
    Cut bell peppers in 1/4 inch dices.
    Stir in peppers and cook until potatoes are tender, about 10 minutes.
