Classic La Mancha Veggies - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 green bell pepper, chopped
    1 medium onion, chopped
    1 medium zucchini, cut into 1/2-inch slices and then cubed
    5 cloves garlic, minced
    3/4 lb. plum tomatoes, skinned and diced
    1 Tbsp. minced parsley
    salt
    freshly ground pepper
Preparation
    Heat oil in a large saucepan and saute the bell pepper, onion, zucchini and garlic until the onion is transparent.
    Add the tomatoes, parsley, salt and pepper.
    Cook over medium heat, uncovered, for 30 minutes.
    At the end of the cooking time, turn up the heat to reduce the liquid; the vegetables should be thick, not soupy.
