Beef Log - cooking recipe

Ingredients
    5 lb. hamburger
    5 tsp. Morton Tender Quick salt cure
    2 1/2 tsp. mustard seed
    2 1/2 tsp. coarse ground black pepper
    2 1/2 tsp. garlic salt
    1 tsp. hickory smoked salt
Preparation
    Mix together thoroughly the meat, salt cure, mustard seed, garlic salt and smoked salt.
    Refrigerate this in an airtight container.
    Remove it each day for three days and remix, this helps to distribute the cure better.
