Caramel Sweet Potatoes - cooking recipe

Ingredients
    8 sweet potatoes, cooked and peeled
    1 c. butter
    2 c. brown sugar
    1/2 c. water
    1/2 c. shredded coconut
Preparation
    Cut sweet potatoes into 1-inch slices.
    Combine butter and brown sugar in a sauce pan and cook on medium heat until mixture thickens, about 10 minutes.
    Add sweet potatoes, lower heat and simmer 20 minutes.
    Sprinkle with shredded coconut before serving. (Some people like to lightly brown the coconut in the oven after sprinkling.)
