Zucchini Relish - cooking recipe

Ingredients
    10 c. chopped zucchini
    4 c. chopped onions
    1 large bell pepper, chopped
    4 Tbsp. salt
    2 3/4 c. white vinegar
    1 Tbsp. turmeric
    1 Tbsp. dry mustard
    1 Tbsp. celery seed
    5 c. sugar
Preparation
    Mix salt, zucchini, onions and pepper thoroughly. Cover and refrigerate overnight. Rinse; drain. Place in large kettle. Bring vinegar, sugar and spices to a boil. Pour over vegetables. Simmer until reaches a boil. Boil 30 minutes and then can. You may pack jars and process 5 minutes.
