Broccoli-Rice Quiche - cooking recipe
Ingredients

1 1/2 c. hot cooked rice (cook 1/2 c.)
3 oz. grated sharp Cheddar cheese
3 eggs
salt and pepper to taste
3 fluid oz. skim milk
3/4 c. canned mushrooms, drained (optional)
1 1/2 c. (10 oz.) frozen chopped broccoli
Preparation

Combine
rice, half of cheese, 1 egg (slightly beaten), salt and
pepper.
Mix
together
and
press firmly in an even layer on bottom
of
9-inch
pie pan (or quiche pan).
Beat 2 eggs slightly.
Stir in broccoli, milk and mushrooms.
Season with salt and
pepper.
Spoon over rice mixture in pan.
Bake for 20 minutes
at
375\u00b0.
Remove
from
oven.
Sprinkle with remaining cheese and bake 10 minutes longer.
Serves 4.
