Squash Casserole - cooking recipe

Ingredients
    2 lb. squash, sliced
    2 onions, chopped
    2 eggs
    1 c. sharp Cheddar cheese, grated
    saltine crackers (about 10), crushed
    salt and pepper to taste
    1/2 c. shortening
Preparation
    In frying pan, combine shortening, squash, onions, salt and pepper.
    Cook until done.
    Drain well.
    Pour in casserole dish. Cool about 15 minutes.
    Beat eggs, then stir into squash and onions.
    Put cheese on top of squash.
    Sprinkle crushed saltines over cheese.
    Preheat oven at 350\u00b0 and bake for 20 minutes.
    Based on 8 servings.
