Artichoke Relish - cooking recipe

Ingredients
    2 lb. Jerusalem artichokes
    1 c. salt
    1 gal. water
    1 pt. ground sweet green or red peppers
    1 pt. ground onions
    2 Tbsp. mustard seed
    1 Tbsp. turmeric
    1/4 tsp. salt
    2 1/4 c. sugar
    1 qt. vinegar
Preparation
    Wash artichokes and trim as needed.
    Soak overnight in brine of 1 cup salt to 1 gallon water.
    Next morning, drain well.
    Using coarse blade, grind artichokes, onions and pepper.
    Mix in mustard seed, 1/4 teaspoon salt and turmeric.
    Dissolve sugar in vinegar and bring to boil.
    Combine mixtures.
    Bring to rolling boil. Pack hot into 1/2 pint jars, leaving 1/2-inch headspace.
    Remove air bubbles; wipe jar rims.
    Adjust lids and process 10 minutes in boiling water bath.
