Lemon Curd - cooking recipe
Ingredients

4 Tbsp. unsalted butter
1/2 c. sugar
1/2 c. freshly squeezed lemon juice
4 egg yolks, slightly beaten
1 Tbsp. lemon zest (freshly prepared)
Preparation

In heavy saucepan or double boiler, combine butter, sugar, lemon juice and egg yolks.
Cook over low - simmering heat, stirring constantly until mixture thickens enough to heavily coat the back of a spoon.
Use wood spoon to stir mixture.
Don't let mixture boil or it will curdle.
Pour curd into small bowl or jar and stir in zest.
Use as is with toast, scones, tarts, cake fillings or mix with 1/2 cup whipped cream or 1/4 cup Cool Whip. Also good to add to parfait.
