Popeye'S Passion - cooking recipe
Ingredients

2 pkg. frozen chopped spinach
1/2 pkg. firm tofu
1 lb. red potatoes, boiled and cooled
1 can cream of potato soup
1/2 tsp. curry powder
1/2 c. shredded Cheddar
salt and pepper to taste
Preparation

Cook, drain and squeeze excess water from spinach.
Boil potatoes; slice thin and line casserole dish.
Cut remainder into small cubes.
Cut tofu into small cubes.
Mix spinach, potato soup (no milk added), curry powder, cubed potatoes and cubed tofu. Spread over thinly sliced potatoes in casserole dish.
Top with shredded Cheddar.
Bake at 350\u00b0 for 30 minutes.
