Roughy Almondine - cooking recipe

Ingredients
    4 orange roughy filets
    1 egg white
    1/4 c. low-fat plain yogurt
    1/4 c. toasted sliced almonds
    1 to 2 tsp. grated orange rind
Preparation
    Poach filets 4 minutes in simmering water.
    Drain and dry thoroughly on paper towels.
    Whip egg white until stiff.
    Fold in yogurt, almonds and orange rind.
    Coat drained filets with egg white mixture.
    Broil until brown and puffy (about 2 to 3 minutes).
