Paella - cooking recipe
Ingredients

1 c. olive oil
1 chicken (2 lb.), cut up
1 large onion, chopped
1 clove garlic, chopped
1 green pepper, chopped
2 c. converted rice (Uncle Ben's)
1 tsp. saffron
1 c. frozen peas
1 lb. shrimp, shelled (raw)
12 mussels
1 c. red pimento
4 c. water
1 tsp. parsley
salt to taste
Preparation

Heat olive oil and brown chicken pieces on all sides. Sprinkle chicken with salt and remove from pan.
Add onion, garlic and green pepper.
Saute until vegetables are tender.
Add rice and saute until rice is golden.
Add saffron, chicken and hot water.
Cook about fifteen minutes.
Add the shrimp, peas, mussels and pimento.
Cook another fifteen minutes.
After that, let it set in pan fifteen minutes before serving.
Serves 6 people.
