Chicken Spaghetti - cooking recipe

Ingredients
    1/4 c. chopped onion
    1/4 c. chopped bell pepper
    1/2 c. chopped celery
    2 Tbsp. cooking oil (I use canola oil)
    1 c. boiling water or chicken broth (I use chicken broth)
    1 pkg. Weight Watchers chicken gravy mix
    4 oz. can sliced mushrooms (optional)
    1 can Ro-Tel tomatoes
    4 oz. Velveeta light
    8 oz. cooked chopped chicken
    3 c. cooked thin spaghetti
Preparation
    Saute first three ingredients in oil.
    Add gravy mix dissolved in chicken broth or water.
    Add mushrooms, Ro-Tel tomatoes, cheese and chicken.
    Stir until warm and cheese is melted.
    Layer mixture with spaghetti in Pyrex dish that is sprayed with Pam.
    Bake in a 400\u00b0 oven for 25 minutes or until bubbly.
    Serves 4.
