Spicy Squash Casserole(Shared By Mrs. Glenn Hill) - cooking recipe

Ingredients
    1 medium onion, chopped
    6 c. yellow squash, cut in small pieces
    1/2 stick margarine
    1 can cream soup (chicken or celery)
    1 (4 oz.) can mushrooms
    1/2 c. sour cream
    1 1/2 c. shredded hot pepper cheese
Preparation
    Stir into squash mixture and microwave at 70% of power about 10 minutes.
    Stir a couple of times during cooking.
    Stir in 1 1/2 cups seasoned stuffing mix or croutons.
    Microwave at 70% of power for about five minutes.
    Top with more stuffing mix or croutons and microwave about 3 or 4 more minutes, uncovered, at full power or until hot and bubbly.
