Quick Corn Relish - cooking recipe

Ingredients
    1 pkg. frozen corn, defrosted and patted dry
    1/2 c. red sweet pepper, chopped
    1/4 red onion, chopped
    1 1/2 tsp. cider vinegar
    2 tsp. olive oil
    1 tsp. honey
    1/2 jalapeno pepper, minced
    salt and pepper to taste
Preparation
    Place corn, pepper, onion and jalapeno pepper in a medium bowl.
    Toss with olive oil.
    Stir in cider vinegar and honey; mix until well blended.
    Season with salt and pepper.
    Cover and chill until needed.
    Yields 4 servings.
