Vanilla Granola - cooking recipe

Ingredients
    2 c. old fashioned oats
    1/3 c. frozen apple juice concentrate, thawed
    2 Tbsp. light brown sugar
    1 Tbsp. ground cinnamon
    1 c. unsweetened flaked coconut (this is where the fat is)
    1 vanilla bean, split and seeds removed
    1 c. dried sour cherries
    1 c. golden raisins
Preparation
    Preheat the oven to 300\u00b0.
    In a large bowl, place the first 4 ingredients; toss well.
    Spread the granola onto a large cookie sheet; bake for 25 minutes, stirring occasionally.
    Stir in the coconut and vanilla seed.
    Bake for another 20 to 25 minutes, until lightly browned.
    Stir in the cherries and raisins.
    Cool and store in an airtight container for up to 1 month.
    Serves 10.
