Chicken And Rice Nicaraguan Style - cooking recipe

Ingredients
    3 c. diced, cooked chicken breast
    1 tsp. garlic
    1 medium chopped onion
    1 medium chopped bell pepper
    2 cubes butter
    1 small jar capers
    1 bag frozen peas and carrots
    2 cans (28 oz.) crushed tomatoes
    6 c. cooked rice (3 c. uncooked)
    1 c. Parmesan cheese
    1 small jar green olives, sliced
Preparation
    Boil chicken in water (6 cups).
    Save the broth and make the rice; set aside.
    Melt butter; saute onion, peppers and garlic until soft.
    Add tomatoes and capers; simmer.
    Add peas, carrots, chicken, rice and olives.
    Mix thoroughly.
    Top with the Parmesan cheese.
    Bake at 325\u00b0 for 1 hour.
